Hamburger Green Bean Casserole
[This is a family original recipe]

Make Green Bean Casserole as per directions. Use low sodium or fat free cream of mushroom soup. Use one extra can after you mix in the meat if too dry. Double the batch.

ADD: 1.5 to 2lbs of seasoned ground beef or turkey. Season how your family and guests would like the ground beef.I season with fresh garlic, onion, sea salt and coarsely ground pepper.

Drain ground beef or turkey thoroughly and you can run it under some hot water to remove the trans fatty greases. Add to green bean casserole mixture then bake an hour at 350. Top with extra fried onions. Yummy!

Bacon Fried Chicken

1/2 c. bacon grease - not strained.
6 pieces chicken [thigh, leg, breast]

Using the leftover grease from frying a pound of bacon you can pan-fry your chicken. This gives it a nice delicate taste and elliminates the need to add seasonings. Fry at medium to medium-high temp.

To ensure thorough cooking, pre-cook chicken in microwave in a microwave covered container for 6-10 minutes or boil for 15 minutes prior to pan-frying.

Old Fashioned Swedish Meatballs

3 lbs (ground) meat [venison, beef, pork, veal]
[The best results is using one lbs veal, one lbs beef/venison and one lbs pork.]
6 eggs
1/2 c. half & half.
sleeve "Town House" crackers
1 can beets - shredded
salt, pepper & 2 clove garlic

White Sauce:
2 sticks of butter
1/2 cup flour
1/2 to 1 quart whole milk
Brown butter and flour. Add in the milk and thicken over low heat.

Mix meat, eggs, half & half, and beets. Blend in spices. Then add in the crushed crackers. Roll into 1 1/2 inch size balls.

Brown the meatballs in the oven on broil. Keeping constant watch, turn the meatballs to be sure they are browned on all sides.

Take the meatballs and put them in a crock pot. Pour the white sauce over the meatballs and cook them on high for one hour and then on low for two hours. Great for pot luck dinners!


4 chicken breasts, boned
4 slices Swiss cheese
2 slices ham, sliced thin and halved

Cream of chicken & mushroom soup and 1/2 cup sour cream.

Pound chicken breasts flat. Put cheese, then ham on chicken and roll up, jelly roll fashion. Secure with toothpicks. Place in glass baking dish, combine 1 can of cream of mushroom soup and 1/2 cup sour cream. Pour over chicken. Bake at 325 degrees for 90 minutes. Serve with rice pilaf and broccoli. Use the sauce in the dish and drizzle over rice and broccoli like a gravy.

Crowd-Pleasing Turkey Cordon Blue

2 turkey breasts
Sliced ham
Swiss Cheese

Cook the turkey breasts individually wrapped in aluminum foil for about two hours on 325. Cooking time varies depending on size of turkey breast. Remove from oven and allow to cool. Once cooled you should be able to pull the top part of the turkey breast away from the bottom part, Place the cheese and the ham by layers inside the breast (length-wise) and then wrap breast with uncooked bacon to close breast - securing with tooth picks if needed. Place in large pan and cook uncovered in oven on 325 for an hour. Remove and let stand.

To serve, slice one to two inch pieces width-wise. At least 4 pieces to each breast. A white sauce or gravy will add a nice touch. This is a real nice dish to serve to a crowd of special guests! Serves 8.
